  1. It’s 1 of LARGE zucchini (or 3 smaller; halved and seeds removed).
  2. It’s 2 of Hot Italian sausages (casing removed).
  3. You need 1/4 cup of cooked rice.
  4. You need 1 tsp of tomato paste.
  5. It’s 1/4 of Green pepper (diced).
  6. It’s 1/2 of onion, chopped.
  7. It’s 2 tbsp of Italian seasoning.
  8. It’s of olive oil, extra virgin.
  9. You need 1/3 cup of tomato sauce.
  10. You need of shredded mozzarella (or your choice of cheese).


  1. Step1: “Baste” your zucchini with olive oil and sprinkle with 1 tbs of the Italian seasoning and set aside on a baking sheet.
