Creamy chicken wild rice soup. An amazing, fresh recipe for Chicken & Wild rice soup. But seriously, I am in love with it. And when I go out for a quick breakfast (again, yes, breakfast) I am on it.
The only thing I have to admit, is that, at times I have had trouble finding chicken, because the stores don’t have much of it. The reason for that is they either have a limited supply or it wasn’t made long enough to get to the store yet. When I run out of chicken, I tend to miss the rest of my ingredients.
I’ve used several types of recipes, but nothing beats making these wonderful ingredients in my own home kitchen. Sometimes, my recipes fail me, but this one actually does so often. My biggest complaint was trying to add some carrots and celery to it, which I couldn’t seem to do.
I had looked all over the internet for recipes like this one and I still wasn’t having much luck. After some research I discovered that there are recipes available online. So I did a little searching. It turns out the secret is in the cooking method.
I know that not everyone knows this, but most chicken recipes aren’t really even all that good. The best ways to cook chicken is to marinate it first, then cook it slowly.
With this recipe, I marinated the chicken in some lemon juice, then cooked it very slowly in a crock pot (with onion and carrot added at the same time). What I ended up with was an awesome creamy chicken & wild rice soup with an outstanding flavor.
In fact, when I was at work I couldn’t stop eating it, because it was that good. Plus the fresh vegetables added were a lot more than I could ever have imagined, such as corn, spinach, cucumber, bell pepper and even celery. There were only a few things that could make this recipe better than adding those to the mix.
The only drawback to this chicken recipe is that I didn’t try it until just recently. And after making a few minor tweaks, it is now my favorite chicken dish. Print

- It’s 1/2 c of uncooked rinsed wild rice.
- You need 3/4 c of diced celery.
- You need 1 c of diced carrot.
- You need 1 c of diced onion.
- Prepare 4–6 of minced garlic cloves.
- Prepare 1 tbsp of Italian seasoning.
- It’s 1-1/2 lb of chicken breast.
- Prepare 1–2 of bay leaves.
- Prepare 6 c of chicken stock.
- Prepare 2 c of water.
- You need 5 tbsp of butter.
- Prepare 1/2 c of flour.
- It’s 2 c of whole milk.
- It’s 2 tsp of salt.
- It’s to taste of Pepper.
- Step1: Add rice, celery, carrot, onion, garlic, Italian seasoning, chicken, bay leaves, chicken stock and water to a slow cooker. Cook on high for 4 hours.
- Step2: At 3-1/2 hours, take out chicken, shred and return to slow cooker.
- Step3: In a pan mix butter, flour, and milk over low-medium heat. Stir until roux thickens. Add roux to slow cooker. Stir well.
- Step4: Stir in 2 teaspoons salt, and pepper to taste. Let stand 5 minutes before serving.

Another great addition would be some shredded cheese. For some reason, this cheese always seems to bring out the chicken’s flavors. So instead of using chicken broth and chicken bouillon, I tried using skimmed milk and a few ounces of cheddar cheese.
In fact, I’m going to try this creamier version on a next time because I think it would be even better! If I could add anything else to this recipe, I would want to try using fresh Rosemary or basil leaves.
If you’re not fond of milk, I suggest using chicken bouillon. because it doesn’t really taste as strong as milk, and it’s healthier.
As far as flavorings go, you could use just about any type of seasoning. as long as it tastes good to you. For example, I used garlic powder in mine.
You can’t go wrong with this creamy chicken and wild rice soup. It’s great any time of the day. Even if you’re feeling low on the carbs, you won’t be disappointed.
You don’t need any fancy equipment to make this delicious chicken soup. All you need are a few pots, some hot water, a stovetop, a little bit of chicken bouillon and a variety of vegetables. Just cook the chicken and vegetables together, then add the chicken bouillon and the milk to make your creamy chicken.
When serving this soup, be sure to add a bit of crackers. or bread to help soak up the soup. If you’re serving leftovers, don’t worry, because it reheats well too.
This is my new favorite type of creamy chicken soup. Not only is it very tasty but it’s also very healthy, so you’ll feel full for hours and not feel guilty about snacking on it while you’re trying to lose weight.
