The first time I made this raspberry almond shortbread I was surprised at how light and fluffy it was. It was as though the batter was so light and airy that the shortbread did not need a lot of extra ingredients or baking time. Even added fruit just to make them even more special!
The next time I tried it, I added some raspberry jam to the almond shortbread. This added a bit of sweetness and even more flavor. The flavor of the jam added a bit of acidity to the shortbread and gave it a good crunch. These shortbread cookies will not disappoint you if you try them one of these ways. If you are looking for something with a little bit more tart and a bit less sweet, then you might want to try a raspberry chocolate chip shortbread cookie.
